Calypso Chicken is a vibrant and flavorful dish originating from the beautiful island of Dominica. It reflects the island’s rich cultural tapestry with its blend of spices and tropical ingredients. Ingredients
- chicken thighs – 8 pieces / about 2 lbs (900 g)
- lime juice – 1/4 cup / 60 ml
- garlic, minced – 4 cloves
- ginger, grated – 1 tbsp / 15 g
- scotch bonnet pepper, chopped – 1 pepper
- thyme – 2 tsp / 2 g
- allspice – 1 tsp / 2 g
- coconut milk – 1 cup / 240 ml
- brown sugar – 2 tbsp / 30 g
- soy sauce – 2 tbsp / 30 ml
- vegetable oil – 2 tbsp / 30 ml
- green onions, chopped – 4 stems
- salt – to taste
- black pepper – to taste
Instructions
- In a large bowl, combine lime juice, minced garlic, grated ginger, chopped scotch bonnet pepper, thyme, and allspice.
- Add chicken thighs to the bowl, ensuring they are well coated with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.
- Heat vegetable oil in a large skillet over medium heat. Remove chicken from the marinade and cook in the skillet until browned on both sides, about 5-7 minutes per side.
- Remove chicken and set aside. In the same skillet, add coconut milk, brown sugar, soy sauce, and remaining marinade. Stir well and bring to a simmer.
- Return the chicken to the skillet, reduce heat to low, cover, and let simmer for about 25-30 minutes until the chicken is cooked through and tender.
- Garnish with chopped green onions, season with salt and pepper to taste, and serve with rice or your choice of side.
