Ingredients

  • coconut milk – 2 cups / 480 ml

  • garlic cloves – 4, minced
  • thyme – 1 tsp
  • scotch bonnet pepper – 1, whole
  • pumpkin – 1 cup / 150 g, diced
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • vegetable or chicken broth – 4 cups / 960 ml

Instructions

  1. 1. Rinse the callaloo leaves thoroughly and chop them coarsely.
  2. 2. In a large pot over medium heat, combine the chopped onions, garlic, thyme, and pumpkin. Sauté until the onions are translucent, about 5 minutes.
  3. 3. Add the callaloo leaves and sliced okra to the pot, stirring to combine.
  4. 4. Pour in the coconut milk and broth, then add the whole scotch bonnet pepper. Season with salt and black pepper.
  5. 5. Bring the mixture to a simmer, cover, and cook for about 30 minutes or until the vegetables are tender.
  6. 6. Adjust the seasoning if necessary. Remove the scotch bonnet pepper before serving to prevent the soup from becoming overly spicy.
  7. 7. Blend partially with an immersion blender for a creamier texture, leaving some chunks for added texture.
