Ingredients

  • Russet potatoes – 2 large / 400 g
  • Poblano peppers – 2 medium / 200 g
  • White onion – 1 medium / 150 g
  • Garlic cloves – 3 cloves / 15 g
  • Vegetable broth – 4 cups / 960 ml
  • Mexican queso fresco – 200 g
  • Olive oil – 2 tbsp / 30 ml
  • Salt – to taste
  • Black pepper – to taste
  • Cilantro – for garnish

Instructions

  1. Roast the poblano peppers on an open flame or under a broiler until the skin is charred. Place them in a sealed plastic bag for 10 minutes to steam, then peel and chop.
  2. In a large pot, heat olive oil over medium heat. Dice the onion and mince the garlic, then sauté until translucent.
  3. Add the chopped potatoes and saute for an additional 5 minutes.
  4. Pour in the vegetable broth, bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 20 minutes.
  5. Add the roasted poblano peppers and crumble the queso fresco into the pot. Mix well and let it simmer for another 10 minutes.
  6. Season with salt and black pepper to taste.
  7. Serve hot, garnished with fresh cilantro.
