Ingredients
- goat meat – 2 lbs / 900 g
- olive oil – 3 tbsp
- onion – 1 large, chopped
- garlic cloves – 4, minced
- red bell pepper – 1, chopped
- green bell pepper – 1, chopped
- tomato – 2 large, chopped
- dry white wine – 1 cup / 240 ml
- beef stock – 2 cups / 480 ml
- bay leaves – 2
- paprika – 1 tsp
- fresh thyme – 1 tsp
- salt – to taste
- black pepper – to taste
Instructions
- In a large pot, heat the olive oil over medium-high heat. Add the goat meat and brown on all sides.
- Remove the meat and set aside. In the same pot, add the onion, garlic, red and green bell peppers, and sauté until soft.
- Stir in the chopped tomatoes and cook until they start to break down.
- Return the goat meat to the pot and pour in the white wine and beef stock. Add the bay leaves, paprika, and thyme.
- Season with salt and black pepper. Reduce the heat to low, cover, and simmer for 2-3 hours, or until the meat is tender.
- Remove the bay leaves before serving hot with crusty bread.
