Ingredients

  • Olive oil – 2 tablespoons / 30 ml
  • Onion – 1 large, sliced
  • Garlic cloves – 4, minced
  • Tomatoes – 3 medium, chopped
  • Potatoes – 4 medium, peeled and sliced
  • Red bell pepper – 1 large, sliced
  • Fish stock or water – 4 cups / 960 ml
  • Cod fillets – 1 lb / 450 g
  • Bay leaves – 2
  • Paprika – 1 teaspoon
  • Salt – to taste
  • Black pepper – to taste
  • Fresh parsley – to garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and sauté until translucent, about 5 minutes.
  3. Stir in garlic and cook for another minute until fragrant.
  4. Add tomatoes, potatoes, and red bell pepper to the pot. Stir well.
  5. Pour in fish stock or water and bring to a simmer.
  6. Add cod fillets, bay leaves, paprika, salt, and black pepper.
  7. Cover and let it simmer gently for about 20-25 minutes until the potatoes are tender and the fish is cooked through.
  8. Remove bay leaves, garnish with fresh parsley, and serve hot.
