Ingredients
- chicken, cut into pieces – 1.5 kg / 3.3 lbs
- onion, finely chopped – 1 medium / 150 g
- garlic cloves, minced – 4 cloves / 20 g
- red chili peppers, sliced – 2 medium / 30 g
- lime juice – 1/4 cup / 60 ml
- vegetable oil – 2 tablespoons / 30 ml
- paprika – 1 teaspoon / 2 g
- ground cumin – 1 teaspoon / 2 g
- salt – 1 teaspoon / 6 g
- black pepper – 1/2 teaspoon / 1 g
- water – 1 cup / 240 ml
Instructions
- In a large bowl, combine lime juice, minced garlic, paprika, ground cumin, salt, and black pepper to create a marinade.
- Add the chicken pieces to the marinade, turning to coat them evenly. Allow to marinate for at least 30 minutes.
- Heat vegetable oil in a large pot over medium heat. Add chopped onion and cook until softened.
- Stir in the sliced red chili peppers, cooking for another 2 minutes.
- Add the marinated chicken pieces to the pot, browning them on all sides.
- Pour in the water, bring to a simmer, and cover the pot. Cook for about 45 minutes, or until the chicken is tender and cooked through.
- Adjust seasoning with more salt and pepper, if needed, before serving.
