Cafreal is a spicy and aromatic meat dish, often made with chicken, and originates from the coastal region of Goa, India. This recipe is steeped in history, traced back to African soldiers who introduced similar culinary delights to the region. The hallmark of Cafreal is its vibrant green marinade made from fresh herbs and spices, making it an irresistible delicacy.

Ingredients

  • Chicken thighs – 1 kg / 2.2 lbs
  • Fresh coriander leaves – 1 cup / 50 g
  • Green chilies – 4-5 pieces
  • Garlic cloves – 8-10 pieces
  • Ginger – 1 inch piece / 5 g
  • Whole spices (cinnamon, cloves, black pepper) – 1 tsp each
  • Vinegar – 2 tbsp / 30 ml
  • Turmeric powder – 1 tsp / 5 g
  • Salt – to taste
  • Oil – 2 tbsp / 30 ml
  • Lemon wedges – For garnish

Instructions

  1. Wash and pat dry the chicken thighs.
  2. In a blender, combine coriander leaves, green chilies, garlic, ginger, whole spices, vinegar, turmeric, and salt. Blend to form a smooth paste.
  3. Marinate the chicken with the paste and let it sit for at least 2 hours in the refrigerator.
  4. Heat oil in a pan on medium heat. Add the marinated chicken and cook, turning frequently, until fully cooked and browned (approximately 25-30 minutes).
  5. Garnish with lemon wedges and serve hot.
