Cachupa is a hearty and comforting stew that originates from Cape Verde, an island country off the northwest coast of Africa. This dish is a staple in Cape Verdean households, celebrated for its use of locally accessible ingredients like corn, beans, and root vegetables, simmered to perfection with distinctively rich and complex flavors. Often prepared for gatherings, it embodies the spirit of sharing and tradition, where families pass down their own cherished versions through generations.

Ingredients

  • dried large hominy corn – 2 cups / 340 g
  • dried kidney beans – 1 cup / 170 g
  • olive oil – 3 tablespoons / 45 ml
  • onion, chopped – 1 large / 150 g
  • garlic cloves, minced – 4 cloves
  • bay leaves – 2
  • smoked pork sausage, sliced – 200 g / 7 oz
  • chicken thighs, bone-in – 500 g / 1.1 lb
  • cabbage, chopped – 1 small head / 400 g
  • sweet potatoes, diced – 2 medium / 300 g
  • tomatoes, diced – 2 large / 300 g
  • tomato paste – 2 tablespoons / 30 g
  • salt – to taste
  • black pepper – to taste
  • water – 8 cups / 2 liters

Instructions

  1. Rinse the hominy and kidney beans. Soak them in water overnight separately.
  2. Drain and rinse the soaked hominy and beans. In a large pot, add the hominy, beans, bay leaves, and 8 cups of water. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until tender.
  3. In a separate large pan, heat olive oil over medium heat. Sauté the onions until translucent. Add minced garlic and cook for another minute.
  4. Add the sliced sausage and chicken thighs. Brown on all sides, about 5-7 minutes.
  5. Stir in the tomatoes and tomato paste, cooking for another 5 minutes.
  6. Combine the meat mixture with the hominy and beans. Add the chopped cabbage and sweet potatoes to the pot.
  7. Simmer the stew for another 45 minutes, or until the vegetables are tender. Season with salt and black pepper to taste.
  8. Remove from heat and let rest for 15 minutes before serving to enhance flavors.
