- Raisins (optional) – 1/2 cup / 70 g
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine flour and salt. Add cold butter and cut in with a pastry blender until the mixture resembles coarse crumbs.
- Whisk together yolk, vinegar, and water. Gradually add to the flour mixture, stirring until dough forms. Wrap and refrigerate for 30 minutes.
- Roll dough to 1/8-inch thickness. Cut into 4-inch circles. Fit into muffin cups.
- In another bowl, combine brown sugar, corn syrup, melted butter, eggs, vanilla, and salt. Stir in raisins if using.
- Fill each tart shell two-thirds full with the filling mixture.
- Bake for 15-20 minutes or until filling is set and pastry is golden. Cool on a wire rack before serving.
