  • Salt – 1/4 tsp / 1 g
  • Raisins (optional) – 1/2 cup / 70 g

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine flour and salt. Add cold butter and cut in with a pastry blender until the mixture resembles coarse crumbs.
  3. Whisk together yolk, vinegar, and water. Gradually add to the flour mixture, stirring until dough forms. Wrap and refrigerate for 30 minutes.
  4. Roll dough to 1/8-inch thickness. Cut into 4-inch circles. Fit into muffin cups.
  5. In another bowl, combine brown sugar, corn syrup, melted butter, eggs, vanilla, and salt. Stir in raisins if using.
  6. Fill each tart shell two-thirds full with the filling mixture.
  7. Bake for 15-20 minutes or until filling is set and pastry is golden. Cool on a wire rack before serving.
