Ingredients
- butter – 3 tbsp / 42 g
- oil – 1 tbsp / 15 ml
- onion – 1 large, finely chopped
- ginger-garlic paste – 2 tbsp / 30 g
- tomato purée – 1 1/2 cups / 360 ml
- cashew nuts – 1/3 cup / 50 g
- red chili powder – 1 1/2 tsp / 3 g
- garam masala – 1 tsp / 2 g
- coriander powder – 1 tsp / 2 g
- sugar – 1 tsp / 4 g
- salt – to taste
- cream – 1/2 cup / 120 ml
- kasuri methi (dried fenugreek leaves) – 1 tsp / 1 g
- coriander leaves – for garnish
Instructions
- Heat butter and oil in a pan over medium heat.
- Add finely chopped onions and sauté until golden brown.
- Stir in ginger-garlic paste and cook for another minute.
- Blend the cashew nuts with a little water to form a smooth paste.
- Add tomato purée to the pan and cook for 10 minutes or until the oil separates.
- Stir in the cashew paste, red chili powder, garam masala, coriander powder, sugar, and salt.
- Reduce the heat and let it simmer for 10 minutes, stirring occasionally.
- Pour in the cream and mix well.
- Add crushed kasuri methi and cook for an additional minute.
- Garnish with coriander leaves before serving.
