Burrida is a traditional Sardinian appetizer that showcases the island’s rich culinary heritage. Made primarily with dogfish or catfish, this dish is a revered staple at many Italian tables, especially in the coastal areas of Sardinia. It is typically served cold, allowing the flavors of its marinated sauce to meld and intensify. The origins of Burrida can be traced back to the need for fishermen to preserve their catch, transforming fresh fish into a delicacy through a combination of vinegar, nuts, and aromatic spices. This delightful dish combines the briny essence of the sea with the earthy, nutty flavors that Sardinian cuisine is celebrated for.

Ingredients

  • Dogfish (or Catfish) – 2 lbs / 900 g
  • White Wine Vinegar – 1 cup / 240 ml
  • Garlic cloves, minced – 3 cloves
  • Fresh Parsley, chopped – 1/4 cup / 15 g
  • Walnuts, finely chopped – 1/2 cup / 60 g
  • Olive Oil – 1/4 cup / 60 ml
  • Salt – 1 tsp / 5 g
  • Black Pepper – 1/2 tsp / 2 g

Instructions

  1. Clean the fish thoroughly and cut into large chunks.
  2. In a pot of boiling salted water, cook the fish for about 10 minutes, or until cooked through. Remove and let it cool.
  3. In a small bowl, mix white wine vinegar, minced garlic, chopped parsley, walnuts, olive oil, salt, and pepper to create the marinade.
  4. Place the cooled fish chunks in a shallow dish and cover with the marinade. Ensure each piece is well coated.
  5. Cover the dish and refrigerate for at least 4 hours or overnight to allow the flavors to meld.
  6. Before serving, let the Burrida come to room temperature and garnish with extra parsley if desired.
