Ingredients

  • Prawns, shelled and deveined – 500 g / 1.1 lb
  • Coconut milk – 1 cup / 240 ml
  • Yellow onion, finely chopped – 1 large / approx. 200 g
  • Garlic cloves, minced – 4 cloves
  • Ginger, grated – 1 inch piece / 1 tbsp
  • Turmeric powder – 1 tsp
  • Lemongrass stalks, smashed – 2 stalks
  • Fish sauce – 2 tbsp
  • Red chili powder – 1 tsp
  • Lime juice – 2 tbsp
  • Vegetable oil – 2 tbsp
  • Salt – to taste
  • Fresh coriander leaves – for garnish

Instructions

  1. Heat the oil in a large pan over medium heat. Add the chopped onion and sauté until translucent.
  2. Stir in the garlic and ginger, cooking until fragrant, about 1 minute.
  3. Add turmeric powder, chili powder, and the smashed lemongrass, stirring to combine.
  4. Pour in the coconut milk and fish sauce, stirring gently until the mixture is well combined. Let it simmer for 5 minutes.
  5. Add the prawns to the pan, cooking until they are pink and opaque, about 3-5 minutes.
  6. Season with salt and lime juice, adjusting to taste.
  7. Garnish with fresh coriander leaves before serving.
