Ingredients

  • Chicken thighs – 1 kg / 2.2 lbs
  • Coconut milk – 2 cups / 480 ml
  • Onions – 2 large, sliced
  • Garlic – 6 cloves, minced
  • Ginger – 1 tablespoon, minced
  • Turmeric powder – 2 teaspoons
  • Coriander powder – 1 tablespoon
  • Chili powder – 1 teaspoon
  • Fish sauce – 2 tablespoons
  • Lime juice – 2 tablespoons
  • Vegetable oil – 3 tablespoons
  • Salt – to taste
  • Fresh cilantro – for garnish
  • Cooked rice – to serve

Instructions

  1. Heat oil in a large pot over medium heat. Add sliced onions and sauté until translucent.
  2. Stir in minced garlic and ginger, cooking for 1-2 minutes until fragrant.
  3. Add turmeric, coriander, and chili powder to the pot, stirring constantly to coat the onions and release the spices’ aromas.
  4. Add chicken thighs to the pot, cooking until they are browned on all sides.
  5. Pour in coconut milk, reduce heat to low, and let the mixture simmer for 30-40 minutes until chicken is cooked through and tender.
  6. Season with fish sauce and lime juice, adjusting the salt to taste.
  7. Serve hot over cooked rice, garnished with fresh cilantro.
