Ingredients

  • olive oil – 3 tbsp / 45 ml
  • yellow onion – 1 large / 150 g, finely chopped
  • garlic cloves – 3 / 15 g, minced
  • tomatoes – 4 medium / 480 g, diced
  • fish stock – 2 cups / 480 ml
  • white wine – 1 cup / 240 ml
  • mixed seafood (squid, shrimp, mussels, and fish fillets) – 1 lb / 450 g
  • potatoes – 2 medium / 300 g, peeled and diced
  • parsley – 1/2 cup / 30 g, chopped
  • salt – to taste
  • black pepper – to taste
  • bay leaves – 2

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until onions are translucent.
  3. Stir in diced tomatoes, cook until the tomatoes break down and form a sauce.
  4. Pour in the fish stock and white wine, bring to a boil.
  5. Reduce heat and add potatoes, simmer for 20 minutes.
  6. Add mixed seafood, salt, and pepper. Simmer for another 10 minutes until seafood is cooked through.
  7. Add bay leaves and parsley, cook for 2 more minutes.
  8. Serve hot with crusty bread.
