Bulkie roll – Classic
This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
The delightful Bulkie roll, a cornerstone of New England’s sandwich culture, embarks from its rich roots in American culinary traditions. This bread is celebrated for its robust, yet soft texture and its slightly sweet flavor profile, perfect for holding up to hearty fillings without getting soggy. Often associated with the Northeastern regions of the United States, the Bulkie roll draws inspiration from European bread-making techniques, yet it holds a unique place in American hearts as the quintessential base for sandwiches, particularly roast beef and turkey.

Ingredients

  • all-purpose flour – 4 cups / 480 g
  • warm water – 1 cup / 240 ml
  • active dry yeast – 2 1/4 tsp / 7 g
  • sugar – 3 tbsp / 37 g
  • salt – 1 1/2 tsp / 9 g
  • butter – 3 tbsp / 42 g, melted
  • egg – 1 large, beaten
  • milk – 1/2 cup / 120 ml

Instructions

  1. In a large bowl, dissolve the sugar and yeast in warm water. Allow it to sit for about 5 minutes until frothy.
  2. Stir in the milk, egg, melted butter, and salt.
  3. Gradually add flour, one cup at a time, mixing until the dough pulls away from the side of the bowl.
  4. Turn dough onto a floured surface and knead for about 10 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover with a damp cloth, and let rise in a warm place until doubled in size, about 1 hour.
  6. Punch down the dough, divide it into 8 equal pieces, and shape each piece into a ball.
  7. Place balls on a greased baking sheet. Cover and let rise until doubled, about 30 minutes.
  8. Preheat the oven to 375°F (190°C).
  9. Bake rolls for 15-20 minutes or until golden brown.
  10. Remove from the oven and cool on wire racks.

Substitutions

  • butter -> margarine
  • milk -> almond milk
  • sugar -> honey

Enhancements in the Next Evolution

  • Incorporate a milk wash before baking for a glossier finish.
  • Allowing the dough to proof for a longer time for increased flavor complexity.
