  • bulgur wheat – 1 cup / 190 g

  • red bell pepper – 1 small, diced
  • hot water – 2 cups / 480 ml
  • salt – 1 teaspoon
  • black pepper – 1/2 teaspoon
  • fresh parsley – 2 tablespoons, chopped (optional)

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add the chopped onion and sauté until golden and translucent.
  3. Stir in the tomato paste and diced red bell pepper, cooking until the pepper softens.
  4. Add the bulgur wheat, stirring to coat it well with the mixture.

  6. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes until the bulgur is tender and the liquid is absorbed.
  7. Fluff with a fork before serving, and sprinkle with fresh parsley if desired.
