Ingredients

  • chicken broth – 4 cups / 960 ml
  • carrots, thinly sliced – 2 medium / 120 g
  • green onions, chopped – 3 stalks / 30 g
  • fresh ginger, grated – 1 tablespoon / 15 g
  • garlic, minced – 2 cloves / 5 g
  • soy sauce – 2 tablespoons / 30 ml
  • cornstarch – 2 tablespoons / 30 g
  • eggs, beaten – 3 large / 150 g
  • coriander leaves, chopped – 1/4 cup / 10 g
  • black pepper – 1/2 teaspoon / 2 g

Instructions

  1. In a large pot, bring the chicken broth to a gentle simmer.
  2. Add carrots, green onions, ginger, and garlic. Cook for 5-7 minutes until vegetables are tender.
  3. Stir in soy sauce and bring the mixture back to a simmer.
  4. Dissolve the cornstarch in 1/4 cup (60 ml) of cool water and slowly add to the simmering soup, stirring constantly to thicken.
  5. Slowly pour the beaten eggs into the soup in a thin stream while stirring the soup in a circular motion to create silky egg ribbons.
  6. Season with black pepper, garnish with coriander leaves, and serve hot.
