Buckwheat patties, known as Hrechanyky, are a traditional Ukrainian meat dish that beautifully combines the hearty, nutty flavor of buckwheat with savory ground meat. Ingredients
- buckwheat groats – 1 cup / 180 g
- water – 2 cups / 480 ml
- ground beef – 1 lb / 450 g
- onion, finely chopped – 1 medium / 150 g
- egg – 1 large
- breadcrumbs – 1/2 cup / 60 g
- salt – 1 tsp
- black pepper – 1/2 tsp
- vegetable oil – 2 tbsp
- fresh parsley, chopped – 2 tbsp
Instructions
- Rinse the buckwheat thoroughly under cold water.
- In a pot, bring the 2 cups of water to a boil. Add the buckwheat and reduce to a simmer. Cover and cook for 15-20 minutes until tender. Let it cool slightly.
- In a bowl, combine the cooked buckwheat, ground beef, chopped onion, egg, breadcrumbs, salt, and black pepper. Mix well until combined.
- Shape the mixture into patties, about the size of the palm of your hand.
- Heat the vegetable oil in a large skillet over medium heat.
- Fry the patties until golden brown and cooked through, about 5 minutes per side.
- Garnish with chopped fresh parsley and serve warm.
