Ingredients
- Olive oil – 3 tbsp
- Garlic, minced – 4 cloves
- Tomatoes, ripe and chopped – 500 g / 2 cups
- Fish stock – 1 liter / 4 cups
- Mixed seafood (calamari, shrimp, mussels, white fish) – 1 kg / 2.2 lbs
- White wine – 120 ml / 1/2 cup
- Parsley, chopped – 1/4 cup
- Salt – to taste
- Black pepper – to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add minced garlic and sauté until fragrant.
- Stir in the chopped tomatoes and cook until they break down into a sauce, about 10-15 minutes.
- Pour in the fish stock and bring to a simmer.
- Add the mixed seafood and white wine to the pot. Cover and cook until the seafood is just cooked through, about 10 minutes.
- Season with salt and black pepper to taste. Stir in the chopped parsley before serving.
- Serve hot with crusty bread on the side to soak up the delicious broth.
