Ingredients

  • all-purpose flour – 3 cups / 375 g
  • unsalted butter – 1 cup / 225 g, chilled and cut into cubes
  • cold water – 1/2 cup / 120 ml
  • salt – 1 tsp / 5 g
  • potatoes – 3 large / 600 g, peeled and thinly sliced
  • onions – 2 medium / 150 g, thinly sliced
  • smoked bacon – 1 cup / 150 g, diced
  • eggs – 3, beaten
  • sour cream – 1 cup / 240 g
  • black pepper – 1/2 tsp / 2 g

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine flour and salt. Add chilled butter and work with fingertips until the mixture resembles coarse breadcrumbs.
  3. Add cold water gradually, mixing until the dough comes together. Form into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
  4. Roll out dough on a floured surface into a rectangle, then fit it into a greased baking dish, leaving an overhang.
  5. In a large mixing bowl, combine the sliced potatoes, onions, bacon, eggs, sour cream, salt, and black pepper.
  6. Spread the filling evenly over the dough, then fold the edges over the filling.
  7. Bake in the preheated oven for 45-50 minutes, until the pastry is golden and the filling is set.
  8. Let it cool slightly before slicing and serving.
