Ingredients

  • sheep meat (bone-in) – 1.5 lbs / 680 g
  • water – 8 cups / 1.9 liters
  • carrots – 2 medium-sized, sliced
  • potatoes – 3 medium-sized, cubed
  • onions – 2, chopped
  • garlic – 4 cloves, minced
  • bay leaves – 2
  • fresh thyme – 2 tsp
  • salt – to taste
  • black pepper – to taste
  • parsley – 1/4 cup / 15 g, chopped

Instructions

  1. Place the sheep meat in a large pot with 8 cups of water. Bring to a gentle simmer over medium heat.
  2. Add the carrots, potatoes, onions, and garlic to the pot.
  3. Drop in the bay leaves and sprinkle the thyme, salt, and black pepper.
  4. Cover the pot partially and let simmer for approximately 2 hours, until the meat is tender and the flavors have melded together.
  5. Remove the bay leaves and bones from the pot, shredding any remaining meat into bite-sized pieces.
  6. Adjust seasoning with additional salt and pepper if needed.
  7. Stir in the chopped parsley just before serving for an added touch of freshness.
