Ingredients

  • All-purpose flour – 2 cups / 240 g
  • Unsalted butter, chilled – 1 cup / 225 g
  • Granulated sugar – 3/4 cup / 150 g
  • Water – 1/4 cup / 60 ml
  • Egg yolks – 4
  • Vanilla extract – 1 tsp
  • Salt – 1/2 tsp
  • Heavy cream – 1 cup / 240 ml

Instructions

  1. In a large bowl, combine flour and salt. Cut in chilled butter until the mixture resembles coarse crumbs.
  2. Gradually add cold water, mixing with a fork until dough holds together. Wrap in plastic and refrigerate for 30 minutes.
  3. Preheat your oven to 350°F (175°C). On a floured surface, roll the dough into a circle and fit it into a 9-inch tart pan.
  4. Bake the crust for 15 minutes until it starts to turn golden. Remove and set aside.
  5. In a medium saucepan, whisk together egg yolks and sugar over medium heat until well combined. Add cream gradually, whisking constantly.
  6. Cook mixture until thickened and it coats the back of a spoon. Remove from heat and stir in vanilla.
  7. Pour the custard into the pre-baked crust. Bake for another 20 minutes until the custard is set but still jiggles slightly.
  8. Remove from oven and let cool before serving.
