Brandacujùn is a fragrant and flavorful Italian spread originating from Liguria, a picturesque coastal region in northwestern Italy. Ingredients
- salt cod (baccalà) – 500 g / 1 lb
- potatoes, peeled – 300 g / 2 medium potatoes
- extra virgin olive oil – 1/2 cup / 120 ml
- garlic cloves, minced – 2 cloves
- fresh parsley, chopped – 2 tbsp
- fresh lemon juice – 2 tbsp
- salt – to taste
- black pepper – to taste
Instructions
- Soak salt cod in cold water for 24 to 48 hours, changing the water several times to remove excess salt.
- Bring a pot of water to a simmer. Add the soaked salt cod and simmer until flaky, about 10 minutes.
- In a separate pot, boil the potatoes until tender, about 15-20 minutes. Drain and set aside.
- In a large mixing bowl, combine flaked salt cod and boiled potatoes. Add olive oil, minced garlic, parsley, lemon juice, salt, and pepper.
- Vigorously mix and mash until the mixture achieves a spreadable consistency, adjusting seasonings as needed.
- Serve spread atop crusty bread or as a filling for roasted vegetables.
