Brandacujùn is a fragrant and flavorful Italian spread originating from Liguria, a picturesque coastal region in northwestern Italy. Known for its rich culinary tradition, Liguria has blessed us with this rustic yet sophisticated dish combining salted cod, garlic, creaminess, and a fresh, zesty finish. Often enjoyed as a tapa or antipasti, Brandacujùn captures the essence of Italian coastal life, bringing the sea and land together in a delightful harmony of tastes.

Ingredients

  • salt cod (baccalà) – 500 g / 1 lb
  • potatoes, peeled – 300 g / 2 medium potatoes
  • extra virgin olive oil – 1/2 cup / 120 ml
  • garlic cloves, minced – 2 cloves
  • fresh parsley, chopped – 2 tbsp
  • fresh lemon juice – 2 tbsp
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Soak salt cod in cold water for 24 to 48 hours, changing the water several times to remove excess salt.
  2. Bring a pot of water to a simmer. Add the soaked salt cod and simmer until flaky, about 10 minutes.
  3. In a separate pot, boil the potatoes until tender, about 15-20 minutes. Drain and set aside.
  4. In a large mixing bowl, combine flaked salt cod and boiled potatoes. Add olive oil, minced garlic, parsley, lemon juice, salt, and pepper.
  5. Vigorously mix and mash until the mixture achieves a spreadable consistency, adjusting seasonings as needed.
  6. Serve spread atop crusty bread or as a filling for roasted vegetables.
