Ingredients

  • fresh white fish fillets – 4 (about 150 g / 5 oz each)
  • dry white wine – 1 cup / 240 ml
  • butter – 4 tbsp / 60 g

  • garlic, minced – 2 cloves
  • fresh parsley, chopped – 2 tbsp / 7 g
  • lemon juice – 1 tbsp / 15 ml
  • salt – to taste

Instructions

  2. In a large skillet, melt the butter over medium heat. Add the shallots and garlic, sautéing until translucent.
  3. Pour in the white wine and bring to a simmer. Carefully place the fish fillets in the skillet.
  4. Cover the skillet and poach the fillets for about 8-10 minutes or until just cooked through.
  5. Remove the fish and set aside. Simmer the sauce uncovered for an additional 2-3 minutes to reduce slightly.
