Ingredients

  • pork lungs – 500 g / 1.1 lbs
  • pork heart – 300 g / 0.7 lbs
  • vinegar – 1/2 cup / 120 ml
  • soy sauce – 2 tbsp / 30 ml
  • onion – 1 large, chopped
  • garlic – 6 cloves, minced
  • bay leaves – 2 leaves
  • bird’s eye chili – 3-4, chopped
  • red bell pepper – 1, chopped
  • black pepper – to taste
  • salt – to taste
  • cooking oil – 3 tbsp / 45 ml
  • water – 1 cup / 240 ml

Instructions

  1. Clean the pork lungs and heart thoroughly. Boil in water for about 30 minutes, then dice into small cubes.
  2. In a large pan, heat the cooking oil over medium heat. Sauté garlic and onions until fragrant.
  3. Add the chopped lungs and heart, and sauté for an additional 5 minutes.
  4. Pour in vinegar and let it simmer without stirring for about 3 minutes.
  5. Add soy sauce, water, bay leaves, and let the mixture simmer for 20 minutes.
  6. Stir in the bird’s eye chili, red bell pepper, salt, and black pepper. Continue to cook for another 10 minutes or until the liquid is reduced.
  7. Serve hot, garnished with extra fresh chilies if desired.
