Boodog is an ancient Mongolian meat dish rooted deeply in the traditions of the nomadic lifestyle. This unique dish involves cooking a whole animal, traditionally a goat or marmot, using its own skin and body cavity to encase the heat, as it roasts from the inside. The essence of boodog speaks to the rugged and resourceful techniques of the Mongolian steppes, capturing the flavors of wind-swept mountains and wide, open grasslands. While originally prepared in pastoral settings, this rendition of boodog brings the robust, earthy flavors of Mongolia to the home kitchen using readily available ingredients.

Ingredients

  • lamb shoulder – 3 lbs / 1.4 kg
  • large onions – 2, quartered
  • potatoes – 4, quartered
  • carrots – 3, large chunks
  • garlic cloves – 6, whole
  • coarse salt – 2 tbsp
  • black pepper – 1 tbsp, freshly ground
  • water – 1 cup / 240 ml

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, place the lamb shoulder, onions, potatoes, carrots, and garlic.
  3. Sprinkle with coarse salt and freshly ground black pepper.
  4. Add water to the pot and cover tightly.
  5. Transfer to the preheated oven and cook for approximately 2.5-3 hours or until the meat is tender.
  6. Check midway through to ensure there is enough liquid, adding more if necessary.
  7. Once cooked, let it rest for 15 minutes before serving. Serve directly from the pot to capture the aromatic steam.
