Ingredients
- flour – 2 cups / 250 g
- water – 1 cup / 240 ml
- salt – 1 tsp
- olive oil – 2 tbsp
- spinach – 500 g
- feta cheese – 200 g
- onion – 1 medium, finely chopped
- black pepper – 1/2 tsp
- egg – 1, beaten
Instructions
- In a mixing bowl, combine the flour, water, and salt to form a dough. Knead for 10 minutes until smooth.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- Meanwhile, prepare the filling by sautéing the onion in olive oil until translucent. Add the spinach and cook until wilted.
- Mix the spinach mixture with crumbled feta cheese and black pepper. Allow to cool.
- Preheat the oven to 180°C (350°F).
- Divide the dough into small portions and roll each into thin sheets.
- Brush each sheet with olive oil and layer them, adding spinach filling between the layers.
- Roll the layered sheets into a spiral and place on a baking tray.
- Brush the top with beaten egg.
- Bake for 35-40 minutes until golden brown.
