Bollito Misto is a traditional Italian meat dish originating from the regions of Piedmont and Emilia-Romagna. Traditionally served on chilly winter days, this dish comprises a variety of boiled meats, ideally combining different textures and flavors. The ‘misto’ in its name signifies the assortment of cuts like beef, chicken, and sometimes veal, creating an orchestra of taste. It’s often accompanied by vibrant, tangy green sauces (salsa verde) or mostarda (candied fruit in mustard syrup), giving every bite a contrasting yet harmonious blend of flavor.

Ingredients

  • beef brisket – 1.5 kg / 3.3 lbs
  • veal shank – 1 kg / 2.2 lbs
  • chicken – 1 whole chicken, about 1.2 kg / 2.64 lbs
  • carrots – 2 large, peeled
  • celery – 2 stalks
  • onion – 1 large, halved
  • cloves – 4
  • bay leaves – 2
  • black peppercorns – 1 tablespoon
  • salt – to taste

Instructions

  1. Fill a large stockpot with water and bring to a boil.
  2. Stud the onion halves with cloves.
  3. Add the beef brisket, veal shank, chicken, carrots, celery, clove-studded onion, bay leaves, and peppercorns into the pot.
  4. Season with salt.
  5. Simmer gently for 3 hours, skimming off any foam or impurities that rise to the surface.
  6. Once cooked, remove the meats and vegetables and slice them into serving pieces.
  7. Serve hot with traditional condiments such as salsa verde or mostarda.
