  • fresh corn kernels – 2 cups / 480 g
  • potatoes, peeled and diced – 2 medium / 300 g
  • onion, chopped – 1 large / 150 g
  • garlic, minced – 2 cloves
  • vegetable broth – 4 cups / 960 ml
  • milk – 1 cup / 240 ml
  • butter – 2 tbsp / 28 g
  • salt – 1 tsp / 5 g
  • black pepper – 1/2 tsp / 2.5 g
  • cumin – 1/2 tsp / 2.5 g
  • fresh cilantro, chopped – 1/4 cup / 15 g

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until they are soft and fragrant, about 5 minutes.
  2. Add the diced potatoes and fresh corn kernels to the pot, stirring well to combine with the onion and garlic.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to a simmer, covering the pot and cooking until the potatoes are tender, about 15 minutes.
  4. Using an immersion blender, partially blend the soup in the pot to achieve a creamy consistency while still preserving some corn and potato chunks.
  5. Stir in the milk, salt, black pepper, and cumin, and let the soup heat through, about 5 more minutes.
  6. Serve hot, garnished with fresh cilantro on top.
