Bülbül yuvası – Classic

Bülbül Yuvası is a delightful Turkish pastry whose name translates to ‘Nightingale’s Nest’ due to its unique, cup-like shape. Originating from Ottoman kitchens, this sweet treat is composed of crisp, flaky pastry layers, filled with a nutty mixture, usually topped with syrup and often garnished with pistachios. Known for its intricate preparation and luxurious taste, Bülbül Yuvası represents the artistry of Turkish pastry-making, bringing together the rich traditions of Anatolian flavors with a presentation that captivates all senses.
Ingredients
- Phyllo dough – 12 sheets
- Unsalted butter – 1 cup / 225 g, melted
- Walnuts – 1 cup / 100 g, finely chopped
- Pistachios – 1/4 cup / 30 g, ground
- Sugar – 1 cup / 200 g
- Water – 1 cup / 240 ml
- Lemon juice – 1 tbsp / 15 ml
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the syrup by boiling sugar and water in a pan. Once boiling, reduce heat and add lemon juice. Simmer for 10 minutes, then let it cool.
- Lay one sheet of phyllo dough on a clean surface and brush it generously with melted butter.
- Sprinkle a thin layer of chopped walnuts over the phyllo sheet, then place another phyllo sheet on top and brush again with butter.
- Using a thin dowel, roll the phyllo sheets gently halfway, pinch the ends gently and push towards the center to form a scrunched look, then slide off the dowel.
- Shape into a circle to form a nest and place on a baking tray. Repeat with remaining dough and walnuts.
- Bake for 25 minutes or until golden brown.
- Once baked, immediately pour cooled syrup over the nests and let absorb.
- Garnish with ground pistachios before serving.
