Ingredients

  • live mud crabs – 2 large (about 4 lbs / 1.8 kg total)
  • black peppercorns – 3 tablespoons
  • butter – 4 tablespoons / 60 g
  • garlic, minced – 6 cloves
  • shallots, finely chopped – 4 medium
  • ginger, julienned – 1-inch piece
  • soy sauce – 2 tablespoons
  • dark soy sauce – 1 tablespoon
  • oyster sauce – 2 tablespoons
  • sugar – 1 tablespoon
  • water – 1/4 cup / 60 ml
  • spring onions, chopped – 2 stalks

Instructions

  1. Clean the crabs thoroughly and cut each into halves or quarters, cracking the claws to allow flavors to penetrate.
  2. Toast black peppercorns in a dry skillet over medium heat until aromatic, about 3 minutes. Coarsely grind in a spice grinder or with a mortar and pestle.
  3. In a large wok, melt butter over medium heat. Add garlic, shallots, and ginger, stir-frying until fragrant and golden brown.
  4. Add the ground black pepper and continue to stir-fry for another minute.
  5. Stir in the soy sauce, dark soy sauce, oyster sauce, sugar, and water, mixing well.
  6. Add crab pieces and toss to coat evenly. Cover and cook for 5-7 minutes until the crab turns bright orange and is cooked through.
  7. Uncover, stir in spring onions, and serve hot.

  • mud crabs -> Dungeness or blue crabs
  • butter -> ghee or margarine
  • soy sauce -> tamari (for gluten-free)
