Ingredients

  • salt – to taste
  • black pepper – to taste
  • fresh thyme – 2 sprigs

Instructions

  1. Trim the green beans and cut them into 2-3 cm pieces.
  2. Peel and core the pears, then cut into quarters.
  3. Dice the speck and potatoes into uniform pieces.
  4. Finely chop the onion.
  5. In a large pot, sauté the speck until crisp over medium heat.
  6. Add the onion and cook until translucent.
  7. Add the potatoes, green beans, pears, and vegetable broth to the pot.
  8. Season with salt, pepper, and add thyme sprigs.
  9. Bring to a boil, then reduce heat and simmer for 30-40 minutes until vegetables are tender.
  10. Remove thyme sprigs before serving.
