Bihari Kebab is a celebrated meat dish originating from the vibrant culinary traditions of Bihar, a state in eastern India. Ingredients

  • Beef tenderloin – 500 g / 1.1 lbs
  • Yogurt – 1/2 cup / 120 g
  • Mustard oil – 2 tbsp / 30 ml
  • Ginger garlic paste – 2 tbsp / 30 g
  • Red chili powder – 1 tsp / 2 g
  • Turmeric powder – 1/2 tsp / 1 g
  • Garam masala – 1 tsp / 3 g
  • Salt – to taste
  • Lemon juice – 1 tbsp / 15 ml
  • Onion – 1 large, finely sliced
  • Skewers – as needed

Instructions

  1. Slice the beef tenderloin into thin strips and set aside.
  2. In a mixing bowl, combine yogurt, mustard oil, ginger garlic paste, red chili powder, turmeric powder, garam masala, and salt.
  3. Add lemon juice to the mix and blend well.
  4. Marinate the beef strips in the mixture, ensuring they are coated evenly. Let it rest in the refrigerator for at least 4 hours, preferably overnight.
  5. Thread the marinated beef onto skewers.
  6. Grill the skewers over medium-high heat, turning occasionally until the meat is cooked through and has a smoky char, about 10-12 minutes.
  7. Meanwhile, fry the onions until golden brown and crisp.
  8. Serve the kebabs hot, garnished with fried onions and accompanied by mint chutney.
