Ingredients

  • garlic cloves – 2, minced
  • red wine – 1 cup / 240 ml
  • chicken stock – 2 cups / 480 ml
  • tomato paste – 2 tablespoons
  • olive oil – 3 tablespoons
  • bay leaf – 1
  • fresh thyme – 1 teaspoon
  • salt – to taste
  • black pepper – to taste
  • Parmesan cheese – for serving, grated

Instructions

  1. Heat olive oil in a large pan over medium heat. Add the chopped onion, carrot, celery, and garlic. Sauté until the vegetables are soft and translucent.
  2. Add the duck meat to the pan, cooking until it’s browned on all sides.
  3. Pour in the red wine and let it reduce by half.
  4. Add the chicken stock, tomato paste, bay leaf, and thyme. Reduce the heat to low, cover, and let simmer for 1.5 to 2 hours, until the duck is tender and the sauce is thickened. Stir occasionally and season with salt and pepper to taste.
  5. Meanwhile, cook the bigoli pasta in salted boiling water until al dente. Reserve some pasta water, then drain the pasta.
  6. Toss the cooked pasta with the duck ragu, using the reserved pasta water to achieve your desired sauce consistency.
  7. Serve hot, topped with grated Parmesan cheese.
