Ingredients
- mutton (boneless) – 500 g / 1.1 lbs
- mustard oil – 3 tbsp / 45 ml
- onion (thinly sliced) – 1 large / 180 g
- garlic paste – 1 tbsp / 15 g
- ginger paste – 1 tbsp / 15 g
- green chilies (chopped) – 2 medium
- turmeric powder – 1/2 tsp / 2 g
- cumin powder – 1 tsp / 5 g
- coriander powder – 1 tsp / 5 g
- garam masala – 1 tsp / 5 g
- salt – to taste
- coriander leaves (fresh, chopped) – 1/4 cup / 15 g
Instructions
- Heat mustard oil in a large pan over medium heat.
- Add the sliced onion and sauté until golden brown.
- Mix in the garlic and ginger paste, cooking for an additional 2 minutes.
- Stir in the chopped green chilies, turmeric, cumin, and coriander powder, sautéing for another 2 minutes.
- Add the mutton pieces and cook while stirring often until they are browned on all sides.
- Cover and simmer for 25-30 minutes, or until the meat is tender, stirring occasionally.
- Season with garam masala and salt to taste. Garnish with freshly chopped coriander leaves before serving.
