Bhatura is a fluffy, deep-fried Indian bread that is a quintessential part of the Punjabi dish known as Chole Bhature, beloved across India. Originating from the diverse culinary traditions of North India, Bhatura is known for its soft, pillowy texture, and slightly tangy flavor due to the incorporation of yogurt in its dough. It pairs exceptionally well with flavorful, spicy chickpea curry, making it a favored item for special occasions and festive meals.

Ingredients

  • All-purpose flour – 2 cups / 240 g
  • Semolina – 2 tbsp / 20 g
  • Baking powder – 1 tsp
  • Sugar – 1 tsp
  • Salt – 1/2 tsp
  • Yogurt – 3/4 cup / 180 g
  • Water – as needed
  • Vegetable oil (for dough) – 1 tbsp
  • Vegetable oil (for frying) – for deep frying

Instructions

  1. In a large bowl, mix together the all-purpose flour, semolina, baking powder, sugar, and salt.
  2. Add the yogurt and 1 tablespoon of oil to the dry ingredients and mix until crumbly.
  3. Gradually add water, a little at a time, until a soft dough forms that is smooth and pliable.
  4. Knead the dough for about 5-7 minutes. Cover with a damp cloth and let rest for about 2 hours.
  5. Divide the rested dough into 8 equal parts and roll each into a ball.
  6. On a lightly floured surface, roll each ball into a circle about 6 inches in diameter.
  7. Heat oil in a deep pan to 350°F (175°C). Carefully slide one rolled bhatura into the hot oil.
  8. Fry the bhatura, pressing lightly with a slotted spoon, until it puffs up and becomes golden brown on both sides.
  9. Remove with a slotted spoon and drain on paper towels. Repeat with remaining dough.
  10. Serve hot with spicy chickpea curry or your favorite side dish.
