Bharli Vangi, a flavorful Maharashtrian dish, is a masterful example of Indian cuisine’s ability to transform simple vegetables into extraordinary experiences. Originating from Maharashtra, India, this vegetarian delight uses tender eggplants filled with a robust blend of spices, coconut, and peanuts. The stuffing is a symphony of taste, with aromatic spices forming a complex, rich, and deliciously nutty concoction. Traditionally served with bhakri or chapati, it’s a dish that captures the essence of home-cooked comfort while celebrating the vibrancy of Indian flavors.

Ingredients

  • small eggplants – 8 pieces
  • grated coconut – 1/2 cup / 50 g
  • roasted peanuts – 1/4 cup / 50 g
  • sesame seeds – 1 tbsp / 12 g
  • onion – 1 medium, finely chopped
  • garlic cloves – 4, crushed
  • ginger – 1 inch / 2.5 cm, grated
  • coriander powder – 1 tsp / 3 g
  • cumin powder – 1 tsp / 3 g
  • red chili powder – 1 tsp / 2 g
  • turmeric powder – 1/2 tsp / 1 g
  • garam masala – 1 tsp / 2 g
  • tamarind pulp – 1 tbsp / 15 g
  • jaggery – 1 tsp / 5 g
  • oil – 2 tbsp / 30 ml
  • water – 1 cup / 240 ml
  • salt – to taste
  • fresh coriander leaves – for garnish

Instructions

  1. Wash and slit the eggplants along their length without cutting through.
  2. Dry roast the sesame seeds until golden. Grind together peanuts, coconut, sesame seeds, ginger, garlic, and onion to form a coarse paste.
  3. Mix this paste with coriander powder, cumin powder, red chili powder, turmeric powder, garam masala, tamarind pulp, jaggery, and salt.
  4. Stuff this mixture into the slit eggplants generously.
  5. Heat oil in a pan, and carefully place the stuffed eggplants in it. Sauté for a few minutes until they begin to brown.
  6. Add water, cover the pan, and simmer on a low flame until the eggplants are cooked through and tender.
  7. Garnish with fresh coriander leaves and serve hot with bhakri or chapati.
