Ingredients
- cucumbers – 2 large / 600 g
- potatoes – 500 g / About 1 lb
- onion – 1 large / 150 g
- butter – 2 tbsp / 30 g
- vegetable broth – 500 ml / 2 cups
- sour cream – 200 g / 3/4 cup
- dill – 1 bunch / 25 g
- salt – to taste
- pepper – to taste
Instructions
- Peel the cucumbers, halve them lengthwise, and remove the seeds with a spoon. Slice into half-moons.
- Peel and dice the potatoes into bite-sized chunks.
- Finely chop the onion.
- In a large pot, heat butter over medium heat. Add onions and sauté until translucent.
- Add cucumbers and potatoes, stirring occasionally until slightly softened, about 5 minutes.
- Pour in the vegetable broth, bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
- Stir in sour cream and dill, and season with salt and pepper.
- Serve hot, garnished with additional dill if desired.
