Bengali chicken curry – Classic

Bengali Chicken Curry, known as ‘Murgir Jhol’ in Bengali, is a beloved dish from the lush landscapes of West Bengal, India. This aromatic stew is steeped in tradition and offers a rich melody of spices, mingled with tender chicken pieces simmered to perfection. Deeply influenced by the historical trade routes passing through Bengal, the dish inherits a perfect balance of sweet, spicy, and savory notes, often accompanying a plate of steaming Basmati rice.
Ingredients
- chicken – 1 kg / 2.2 lbs, bone-in pieces
- potatoes – 2 medium, peeled and quartered
- onions – 2 large, thinly sliced
- ginger paste – 2 tbsp
- garlic paste – 1 tbsp
- tomatoes – 2 large, chopped
- mustard oil – 3 tbsp
- bay leaves – 2
- green cardamom pods – 4
- cloves – 4
- cinnamon stick – 1 inch
- cumin powder – 1 tsp
- coriander powder – 2 tsp
- turmeric powder – 1 tsp
- red chili powder – 1 tbsp
- salt – to taste
- sugar – 1 tsp
- water – 2 cups / 480 ml
- fresh cilantro – for garnish
Instructions
- Heat mustard oil in a large pot until it starts to smoke lightly. Add bay leaves, cardamoms, cloves, and cinnamon stick; sauté until fragrant.
- Add sliced onions and cook until they are golden brown.
- Mix in ginger and garlic paste, and cook for 2 minutes until the raw smell vanishes.
- Add chopped tomatoes, turmeric, cumin, coriander, red chili powder, and sugar. Cook until the tomatoes break down and oil starts to separate from the mixture.
- Add chicken pieces, stir to coat with the spice mixture, and cook for 5 minutes on high heat.
- Add potatoes and salt, mixing everything well.
- Pour in water, bring to a boil, then reduce heat to a simmer. Cover and cook until the chicken and potatoes are cooked through, approximately 30-40 minutes.
- Adjust seasoning, garnish with fresh cilantro, and serve with rice.
