Bendekaayi Gojju is a quintessential Indian stew hailing from the southern state of Karnataka. Known for its robust and tangy flavors, this dish brings together the unique taste of okra (also called lady’s finger) with a vibrant blend of spices and tamarind’s sharpness, delivering a comforting and soulful culinary experience. Traditionally enjoyed with rice, this gojju stands out for its simplicity and depth of taste, capturing the essence of Karnataka’s culinary heritage.

Ingredients

  • okra – 250 g / about 30 pods
  • tamarind paste – 2 tablespoons
  • jaggery – 1 tablespoon
  • turmeric powder – 1/2 teaspoon
  • red chili powder – 1 teaspoon
  • coriander seeds – 1 tablespoon
  • cumin seeds – 1 teaspoon
  • mustard seeds – 1 teaspoon
  • curry leaves – 10-12 leaves
  • salt – to taste
  • oil – 2 tablespoons
  • water – 2 cups / 480 ml

Instructions

  1. Wash and dry the okra thoroughly. Trim the ends and cut the okra into 1-inch pieces.
  2. In a pan, dry roast the coriander seeds and cumin seeds until aromatic. Allow to cool and then grind to a coarse powder.
  3. In the same pan, heat oil over medium heat. Add mustard seeds and let them splutter.
  4. Add curry leaves and sauté for a few seconds before adding the cut okra. Stir fry until the okra begins to tender.
  5. Mix in the ground spice powder, turmeric powder, red chili powder, and salt. Stir to coat the okra evenly.
  6. Pour in water and bring to a boil. Reduce heat and simmer until the okra is cooked through.
  7. Add tamarind paste and jaggery, mixing well. Adjust seasoning and simmer for another 5-10 minutes until the flavors meld.
