Ingredients
- red bell peppers – 2 large / 280 g
- onion – 1 medium / 125 g
- garlic cloves – 3 cloves / 15 g
- ginger – 1-inch piece / 10 g, grated
- curry leaves – 10-12 leaves
- mustard seeds – 1 teaspoon
- cumin seeds – 1 teaspoon
- tamarind paste – 1 tablespoon / 15 ml
- jaggery or brown sugar – 1 tablespoon / 15 g
- red chili powder – 1 teaspoon
- salt – 1 teaspoon
- vegetable oil – 2 tablespoons / 30 ml
Instructions
- Chop the red bell peppers and onion into small pieces.
- Heat the vegetable oil in a pan over medium heat. Add the mustard seeds and cumin seeds, allow them to splutter.
- Add the curry leaves, followed by the chopped onions, garlic, and ginger. Sauté until the onion becomes translucent.
- Add the chopped bell peppers and sauté until they become soft and cooked through.
- Stir in the tamarind paste, jaggery, red chili powder, and salt. Cook for another 2-3 minutes, allowing the flavors to meld well.
- Allow the mixture to cool, then blend it into a smooth paste using a blender.
- Transfer the chutney to a bowl to serve or store in an airtight container.
