Ingredients
- white fish fillets – 4 pieces / approx. 600 g
- butter – 30 g / 2 tbsp
- all-purpose flour – 30 g / 2 tbsp
- milk – 500 ml / 2 cups
- onion – 1 small, finely chopped
- bay leaf – 1 leaf
- nutmeg – a pinch
- white pepper – to taste
- salt – to taste
- parsley – 2 tbsp, chopped
- lemon juice – 1 tbsp
Instructions
- Preheat your oven to 180°C (350°F).
- Place the white fish fillets in a single layer in a lightly oiled baking dish. Drizzle lemon juice over them, and season with salt and white pepper.
- Bake in the preheated oven for 15-18 minutes or until the fish is just cooked through.
- Meanwhile, start the béchamel sauce. In a saucepan, melt the butter over medium heat. Add finely chopped onion and cook until softened, about 3 minutes.
- Stir in the flour and cook, stirring constantly, for about 2 minutes or until it forms a smooth paste (roux).
- Gradually whisk in the milk, ensuring no lumps form, and add the bay leaf, nutmeg, salt, and pepper.
- Continue to cook the sauce, whisking constantly, until it thickens and coats the back of a spoon, about 7-10 minutes. Remove the bay leaf.
- Once the fish is done, gently flake it into the sauce, reserving some nice pieces for presentation.
- Fold in parsley and adjust seasoning if necessary.
- Serve immediately, garnished with remaining fish pieces on top and a sprinkle of parsley.
