This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Bazlama is a traditional Turkish flatbread, popular in households and street markets throughout Turkey. With its origins deeply rooted in Anatolian cuisine, Bazlama is known for its soft, fluffy texture, thanks to the use of basic ingredients like flour, yogurt, and water. The bread’s charm lies in its simplicity and the comforting warmth that it brings, making it a staple accompaniment to meals or a delightful snack on its own, often enjoyed with butter or cheese.
Ingredients
- all-purpose flour – 3 cups / 375 g
- plain yogurt – 1 cup / 245 g
- warm water – 1/4 cup / 60 ml
- active dry yeast – 1 packet / 7 g
- sugar – 1 tsp / 5 g
- salt – 1 tsp / 5 g
- olive oil – 2 tbsp / 30 ml
Instructions
- In a small bowl, dissolve the sugar in warm water and add the yeast. Let it sit for about 10 minutes until foamy.
- In a large mixing bowl, combine flour and salt. Create a well in the center, pour in the yeast mixture and yogurt.
- Mix until a dough forms, then knead on a floured surface for 10 minutes until smooth.
- Place the dough in a lightly oiled bowl, cover with a damp cloth and let it rise in a warm place for 1 hour or until doubled in size.
- Divide the dough into 6 equal portions and shape into balls. Roll each ball into a flat round, about 1/2 inch thick.
- Heat a non-stick skillet over medium heat and lightly oil it. Cook each Bazlama for 2-3 minutes on each side or until golden brown spots appear.
- Serve warm, optionally spread with butter or topped with cheese.
Substitutions
- plain yogurt -> Greek yogurt

Enhancements in the Next Evolution
