Ingredients
- okra – 500 g / 1 lb
- ripe tomatoes – 400 g / 14 oz, chopped
- olive oil – 80 ml / 1/3 cup
- onion – 1 large, finely chopped
- garlic cloves – 3, minced
- salt – 1 tsp
- black pepper – 1/2 tsp
- fresh parsley – 2 tbsp, chopped
- water – 250 ml / 1 cup
- red wine vinegar – 2 tbsp
Instructions
- Prepare the okra by washing and patting dry. Trim the stems without cutting into the pod.
- Heat olive oil in a large pot over medium heat. Add the onion and sauté until translucent.
- Add the garlic and stir for 30 seconds until fragrant.
- Mix in the tomatoes, salt, pepper, and vinegar; allow to simmer for 5 minutes.
- Add the okra, stirring gently to coat with the tomato mixture.
- Pour in the water, bring to a boil, then reduce to a simmer. Cover and cook for 40 minutes until the okra is tender.
- Stir in the parsley, adjust seasoning if needed, and cook uncovered for another 5 minutes.
- Serve warm, garnished with additional parsley if desired.
