Bambalouni is a beloved Tunisian pastry, cherished for its fluffy texture and golden exterior. Often enjoyed as a street food snack, this delightful treat is made with a yeast-based dough that is carefully fried until crispy on the outside and soft on the inside. The roots of Bambalouni trace back to traditional Tunisian breakfast customs, where it is enjoyed with a sprinkle of sugar or drizzled with honey. Its simplicity and irresistible flavor make it a satisfying indulgence perfect for any occasion.

Ingredients

  • all-purpose flour – 3 cups / 375 g

  • active dry yeast – 2 teaspoons / 7 g
  • sugar – 1 tablespoon / 15 g
  • salt – 1 teaspoon / 5 g

Instructions

  1. In a bowl, mix the yeast with the warm water and sugar. Let it sit for about 10 minutes until frothy.

  3. Cover the dough with a damp cloth and let it rise in a warm place until doubled in size, about 1 to 1.5 hours.
  4. Heat vegetable oil in a deep frying pan over medium heat until it reaches 350°F (175°C).
  5. Divide the dough into small portions. Stretch them into thin rounds using oiled hands.
  6. Fry each round until golden brown on each side, about 1-2 minutes per side.
  7. Drain on paper towels and dust with powdered sugar before serving.
