Balti sauce is a rich and aromatic curry base that originates from Birmingham in the United Kingdom, inspired by traditional Kashmiri-style cooking. The dish is named after the wok-like ‘balti’ pot in which it is traditionally cooked and served. A hallmark of Balti sauce is its fresh and vibrant flavors, achieved by using a blend of spices and herbs that encapsulate the fusion of Indian and Pakistani cuisines adapted to Western tastes. Ingredients

  • vegetable oil – 2 tablespoons / 30 ml
  • onion, finely chopped – 2 large / 400 g
  • garlic cloves, minced – 3 cloves / 15 g
  • fresh ginger, grated – 1 inch piece / 15 g
  • green chili, finely chopped – 1 medium / 10 g
  • canned tomatoes, pureed – 1 can (14 oz) / 400 g
  • ground coriander – 2 teaspoons / 4 g
  • ground cumin – 2 teaspoons / 4 g
  • turmeric powder – 1 teaspoon / 2 g
  • garam masala – 1 teaspoon / 2 g
  • fresh coriander leaves, chopped – 1/2 cup / 15 g
  • salt – to taste

Instructions

  1. Heat vegetable oil in a large pan over medium heat.
  2. Add the onions and sauté until golden brown.
  3. Stir in the garlic, ginger, and green chili, cooking for 2-3 minutes until fragrant.
  4. Add the pureed tomatoes and bring to a simmer.
  5. Mix in coriander, cumin, turmeric, and garam masala, allowing the sauce to thicken, stirring occasionally for about 10 minutes.
  6. Season with salt, to taste, and stir in fresh coriander leaves.
  7. Simmer for an additional 5 minutes before serving over your choice of protein or vegetables.
