- vegetable oil – 2 tablespoons / 30 ml
- onion, finely chopped – 2 large / 400 g
- garlic cloves, minced – 3 cloves / 15 g
- fresh ginger, grated – 1 inch piece / 15 g
- green chili, finely chopped – 1 medium / 10 g
- canned tomatoes, pureed – 1 can (14 oz) / 400 g
- ground coriander – 2 teaspoons / 4 g
- ground cumin – 2 teaspoons / 4 g
- turmeric powder – 1 teaspoon / 2 g
- garam masala – 1 teaspoon / 2 g
- fresh coriander leaves, chopped – 1/2 cup / 15 g
- salt – to taste
Instructions
- Heat vegetable oil in a large pan over medium heat.
- Add the onions and sauté until golden brown.
- Stir in the garlic, ginger, and green chili, cooking for 2-3 minutes until fragrant.
- Add the pureed tomatoes and bring to a simmer.
- Mix in coriander, cumin, turmeric, and garam masala, allowing the sauce to thicken, stirring occasionally for about 10 minutes.
- Season with salt, to taste, and stir in fresh coriander leaves.
- Simmer for an additional 5 minutes before serving over your choice of protein or vegetables.
