Originating from Montenegro, Balšića Tava is a traditional, hearty meat dish renowned for its rich flavor and filling nature. Named after the medieval Balšić noble family, this dish embodies the rustic and robust culinary traditions of the region. Often served during family gatherings and festive occasions, Balšića Tava combines succulent meats and staple vegetables, bringing generations together around a shared table.
Ingredients
- Pork shoulder – 1 kg / 2.2 lbs
- Potatoes – 500 g / 1 lb
- Onions – 2 large
- Garlic – 4 cloves
- Red bell pepper – 1 large
- Tomato paste – 2 tbsp / 30 g
- Paprika – 2 tsp / 5 g
- Vegetable oil – 3 tbsp / 45 ml
- Salt and pepper – to taste
- Bay leaves – 2 leaves
Instructions
- Preheat oven to 180°C (350°F).
- Cut pork shoulder into cubes and season with salt, pepper, and paprika.
- Peel potatoes and slice into rounds; slice onions and bell pepper.
- In a large skillet, heat oil over medium-high heat. Brown pork cubes in batches and set aside.
- In the same skillet, add onions, garlic, and bell pepper; sauté until softened.
- Stir in tomato paste and cook for another minute.
- Layer potatoes, browned pork, and sautéed vegetables in a baking dish.
- Add bay leaves, cover with foil, and bake for 1.5 hours.
- Remove foil and bake for an additional 30 minutes or until the top is golden brown.

- Red bell pepper -> Green bell pepper
