Baklava – Classic
This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Baklava is a rich, sweet pastry made of layers of filo dough filled with chopped nuts, sweetened and held together with syrup or honey. Tracing its roots back to the kitchens of the Ottoman Empire, it has become a staple dessert in Middle Eastern and Mediterranean cuisines, celebrated for its flaky texture, nutty filling, and fragrant syrup.

Ingredients

  • phyllo dough – 1 package (16 oz / 454 g)
  • unsalted butter – 1 cup / 226 g
  • walnuts – 2 cups / 240 g, finely chopped
  • ground cinnamon – 1 tsp / 2 g
  • water – 1 cup / 240 ml
  • granulated sugar – 1 cup / 200 g
  • honey – 1/2 cup / 170 g
  • vanilla extract – 1 tsp / 5 ml
  • lemon juice – 1 tbsp / 15 ml

Instructions

  1. Preheat the oven to 350°F (175°C). Butter the bottom and sides of a 9×13 inch baking dish.
  2. In a bowl, mix the chopped walnuts with cinnamon and set aside.
  3. Unroll phyllo dough and cut whole stack in half to fit the dish. Cover with a damp cloth to keep from drying out.
  4. Place two sheets of dough in the dish, butter thoroughly. Repeat until you have 8 sheets layered.
  5. Sprinkle 2-3 tablespoons of the nut mixture on top. Layer with two more sheets, butter, add more nuts, layering as you go.
  6. The top layer should be about 6-8 sheets deep. Using a sharp knife, cut the baklava into 4 long rows, then cut diagonally to make diamond shapes.
  7. Bake for about 50 minutes until the baklava is golden and crisp.
  8. While baking, combine water and sugar in a saucepan over medium heat, bring to boil and add honey, vanilla, and lemon juice, reduce heat and simmer for about 20 minutes.
  9. Remove baklava from oven and immediately spoon the syrup over it. Let cool completely before serving.
