Ingredients

  • shark or white fish fillets – 500 g / 1.1 lbs
  • lime juice – 2 tablespoons
  • garlic cloves – 4, minced
  • thyme – 1 teaspoon
  • all-purpose flour – 2 cups / 240 g
  • baking powder – 1 tablespoon
  • sugar – 1 tablespoon
  • salt – 1 teaspoon
  • water – 3/4 cup / 180 ml
  • oil for frying – as needed
  • lettuce – 1 cup, shredded
  • tomato – 1, sliced
  • cucumbers – 1, sliced
  • hot sauce – to taste
  • mango chutney – to taste

Instructions

  1. Marinate shark fillets in lime juice, minced garlic, and thyme for 30 minutes.
  2. In a bowl, combine flour, baking powder, sugar, and salt. Gradually add water to form a smooth dough.
  3. Divide dough into 8 pieces, roll into balls, and flatten slightly.
  4. Heat oil in a pan over medium heat and fry the dough till golden and puffed, about 3 minutes per side.
  5. Fry the marinated shark pieces until golden brown and cooked through.
  6. Assemble by placing shark in bake, adding lettuce, tomato, cucumber, hot sauce, and mango chutney.
