Ingredients

  • lamb shoulder – 1 kg / 2.2 lbs, cut into cubes
  • onion – 2 large, diced

  • potatoes – 4 medium, cubed

  • bay leaves – 2
  • thyme – 1 teaspoon
  • paprika – 1 tablespoon
  • salt – 1 teaspoon
  • black pepper – 1/2 teaspoon
  • olive oil – 2 tablespoons
  • beef stock – 750 ml / 3 cups
  • red wine – 250 ml / 1 cup

Instructions

  1. In a large pot, heat the olive oil over medium-high heat.
  2. Add the cubed lamb and sear until browned on all sides. Remove and set aside.
  3. In the same pot, add onions and garlic, sautéing until softened.
  4. Introduce carrots and potatoes, stirring to coat with the fragrant mixture.
  5. Return the lamb to the pot, incorporating bay leaves, thyme, paprika, salt, and pepper.
  6. Pour in the beef stock and red wine, bringing the mixture to a gentle boil.
  7. Reduce heat to low, cover, and let simmer for 2-3 hours until the lamb is tender.
  8. Adjust seasoning if necessary and remove bay leaves before serving.
